For Fundamentals of Food Service Management (HF 120) we were challenged to design a restaurant concept, create a full menu with a variety of courses and prepare a four course meal from the menu. As team leader I had to make sure my chefs were prepared, studied the recipes and had all the ingredients to prepared the dishes. In order to complete the tasks we had to prepared all of our mise en plats and make sure each dish came out in a timely order for our chefs critique.
Taking inspiration from the early immigrants that came to Boston we created tradition dishes with a modern American twist.
